Project Overview

Located at 137 W. Columbus Avenue, The Flying Pepper Cantina is a masterclass in scaling a small business through thoughtful intervention. What began as a 2016 food truck venture was reimagined into a high-end, coastal Mexican restaurant. As part of a larger 8,000 SF mixed-use redevelopment, the restaurant space received a dedicated $375,000 renovation investment to create an environment that matched the caliber of Chef Humberto Nieto’s authentic Michoacán cuisine.

From Craigslist Truck to Architectural Showcase

Humberto Nieto and Laura Haverkos built their reputation on fresh, local ingredients and family recipes, but moving from a “stripped-down box truck” to a permanent landmark required a leap in both scale and design.

Small Nation, alongside the design team, identified the historic potential of the West Columbus Avenue site. The building—which had previously fallen into disrepair—was partitioned to house both a modern coworking space and this upscale cantina. The renovation focused on “unlocking” the building’s historic bones while injecting a vibrant, coastal Mexican aesthetic that honored the owners’ roots.

Designing for Authenticity and Experience

The architectural strategy was highly collaborative. The owners were integrated into every design phase to ensure the physical space told their story. Key design highlights include:

  • Custom Interior Finishes: Careful selection of flooring and a bespoke bar design that serves as the room’s focal point.
  • Acoustic Innovation: The use of sound-absorbing lighting fixtures to maintain an energetic yet comfortable dining atmosphere.
  • Cultural Integration: Custom Otomi art sculptures and vibrant design elements that pay homage to Michoacán, Mexico.
  • The “Front Porch” Patio: A critical addition that required deep collaboration with the city to create a handicap-accessible outdoor dining area, reflecting the hospitality of the local community.

A Catalyst for Downtown Vitality

The Flying Pepper Cantina opened in December 2020, filling a significant gap in the local market for authentic, light, and fresh coastal fare. By providing a full bar featuring curated tequilas and freshly squeezed juices, the space has become a nighttime anchor for downtown Bellefontaine.

The project demonstrates that when an architect designs for a specific operator’s “grit and talent,” the result isn’t just a beautiful building—it’s a thriving, scalable business asset.
